Ingredients
  

  • 12 large eggs
  • 18 ounces full fat cottage cheese 1 tub (I used 4%)
  • 1 cup milk I used whole milk
  • 1/2 cup Parmesan cheese grated & divided
  • 1/4 teaspoon salt divided
  • 1/4 teaspoon ground black pepper
  • 3 cups baby spinach chopped
  • Cooking spray I use Misto

Instructions
 

  • Preheat the oven to 350°F (175°C) and lightly grease a baking dish with cooking spray.
  • Whisk together eggs, cottage cheese, milk, salt, and pepper in a large bowl until smooth.

  • Stir in chopped spinach and half of the Parmesan cheese, mixing well.

  • Pour the mixture into the greased baking dish and sprinkle the remaining Parmesan on top.
