- 12 large eggs
- 18 ounces full fat cottage cheese 1 tub (I used 4%)
- 1 cup milk I used whole milk
- 1/2 cup Parmesan cheese grated & divided
- 1/4 teaspoon salt divided
- 1/4 teaspoon ground black pepper
- 3 cups baby spinach chopped
- Cooking spray I use Misto
Preheat the oven to 350°F (175°C) and lightly grease a baking dish with cooking spray.
Whisk together eggs, cottage cheese, milk, salt, and pepper in a large bowl until smooth.
Stir in chopped spinach and half of the Parmesan cheese, mixing well.
Pour the mixture into the greased baking dish and sprinkle the remaining Parmesan on top.
Bake for 35 minutes or until the eggs are set and the top is golden brown.
Let it cool for 5 minutes before slicing.
Serve warm and enjoy.
