- 2 lbs yukon gold potatoes
- 1 tsp sea salt or to taste
- 1/4 tsp black pepper
- 1 tsp paprika or to taste
- 3 Tbsp extra light olive oil or any high heat cooking oil
- 1 Tbsp parsley finely chopped, optional garnish
Preheat the oven to 425°F (220°C).
Wash and dice the Yukon Gold potatoes into bite-sized pieces.
In a large bowl, toss the potatoes with olive oil, sea salt, black pepper, and paprika.
Spread the potatoes evenly on a baking sheet in a single layer.
Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
Remove from the oven and sprinkle with fresh parsley (optional).
