Make the dressing:
- 1/4 cup extra-virgin olive oil
- 1 tablespoon minced shallots
- 2 teaspoons white wine vinegar
- 2 teaspoons honey
- 1/4 teaspoon sumac
- 1/2 teaspoon kosher salt
