- 2 pounds potatoes cut into 1 ½- to 2-inch chunks
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 3/4 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 2 pounds skinless boneless chicken breasts, diced into 1 ½-inch pieces
- 1 cup creamy Parmesan garlic sauce such as Buffalo Wild Wings Parmesan Garlic Sauce
- 1/2 cup water or chicken stock
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese optional
- 1 tablespoon chopped fresh parsley or to taste (optional)
Preheat oven to 400°F (200°C). Grease a baking dish.
Toss potatoes with olive oil, salt, pepper, and paprika. Spread them in the baking dish.
Add diced chicken on top and pour the Parmesan garlic sauce mixed with water or stock.
Sprinkle shredded mozzarella cheese evenly over the dish.
