  • 2 cooked beets 4 oz
  • 2 cups rolled oats
  • 1 1/4 cup almond milk
  • 1 1/2 tbsp cacao powder
  • 1 tsp vanilla extract
  • 2 tbsp ground flaxseed
  • 1/4 tsp salt
  • 1 tbsp baking powder
  • 3 tbsp pure maple syrup
  • 1-2 tsp beet juice

Instructions
 

  • Add all ingredients to a high-speed blender. Blend on high until smooth, but don’t over-blend.

  • Let the batter rest for 10-15 minutes to thicken—this step is key for fluffier waffles or pancakes!

  • For waffles, preheat your waffle maker and cook according to the manufacturer’s instructions. Cook on medium-high heat for a crispier exterior.
  • For pancakes, heat a skillet on medium. Lightly spray with oil.
