- Heat butter and olive oil in a large pan over medium heat.

- Sauté diced onion and minced garlic until fragrant.

- Add coconut milk, curry paste, tomato paste, yogurt, spices, and salt. Bring to a boil.

- Reduce heat to low, add chicken, and simmer for 15 minutes or until cooked through.

- While simmering, prepare cauliflower rice if desired.

- Serve the curry hot, garnished with cilantro, and with your preferred side.
