Ingredients
  

  • 3 tbsp butter
  • 2 tbsp extra virgin olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 14 oz coconut milk
  • 1 tablespoon Indian curry paste butter chicken curry paste
  • 1/2 cup tomato paste
  • 3/4 cup greek yogurt or plain whole milk yogurt plus optional extra to serve
  • 2 tsp garam masala
  • 2 tsp ground coriander cilantro
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • salt
  • 2 lb chicken breasts sliced into bite-sized pieces
  • 4 tbsp cilantro to serve

Instructions
 

  • Heat butter and olive oil in a large pan over medium heat.

  • Sauté diced onion and minced garlic until fragrant.

  • Add coconut milk, curry paste, tomato paste, yogurt, spices, and salt. Bring to a boil.

  • Reduce heat to low, add chicken, and simmer for 15 minutes or until cooked through.

  • While simmering, prepare cauliflower rice if desired.
