- 3 tbsp butter
- 2 tbsp extra virgin olive oil
- 1 yellow onion diced
- 3 cloves garlic minced
- 14 oz coconut milk
- 1 tablespoon Indian curry paste butter chicken curry paste
- 1/2 cup tomato paste
- 3/4 cup greek yogurt or plain whole milk yogurt plus optional extra to serve
- 2 tsp garam masala
- 2 tsp ground coriander cilantro
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- salt
- 2 lb chicken breasts sliced into bite-sized pieces
- 4 tbsp cilantro to serve
Heat butter and olive oil in a large pan over medium heat.
Sauté diced onion and minced garlic until fragrant.
Add coconut milk, curry paste, tomato paste, yogurt, spices, and salt. Bring to a boil.
Reduce heat to low, add chicken, and simmer for 15 minutes or until cooked through.
While simmering, prepare cauliflower rice if desired.
Serve the curry hot, garnished with cilantro, and with your preferred side.
