Chicken Nuggets:
- 2 lbs ground chicken
- 2 eggs
- 1/3 cup grated parmesan cheese
- 1/2 cup shredded mozzarella
- 3/4 tsp each garlic powder onion powder + paprika
- 2 tsp salt
Coating:
- 1/2 cup grated parmesan cheese
- 3 tbs potato starch or tapioca starch or corn starch
- 1/2 tsp paprika
- 1/2 tsp dried parsley
Spicy Ketchup:
- 1/4 cup ketchup
- 1/2 tbs Worcestershire sauce
- 1 tsp Sriracha sauce
Preheat the oven to 425°F and line a baking sheet with parchment paper.
Mix coating ingredients in a shallow bowl and set aside.
Combine all nugget ingredients in a large bowl and mix well.
Shape chicken mixture into small or medium ovals, then coat in the prepared mixture.
Arrange nuggets on the baking sheet and spray with olive oil.
Bake for 15 minutes, flip, and bake for an additional 10 minutes until cooked through.
Mix ketchup, Worcestershire sauce, and Sriracha for the spicy ketchup dip.
Serve the nuggets warm with the spicy ketchup.
